John and Connie together co-own 4 restaurant locations in Calgary, Alberta; CHARCUT Roast House, charbar, Alley Burger and the Rooftop Bar at Simmons. The pair are top believers in farm-to-table ethos while serving the best in Alberta prime beefs.

Their institutions have earned several prime accolades including placing within Canada’s 100 Best Restaurants, earning EnRoute’s Best New Restaurant plus DeSousa’s appearances as a finalist on Food Network’s Top Chef Canada.

Jackson had studied traditional sausage techniques in Italy while DeSousa trained in butchery in Germany. Prior to this, they had worked together to compete in both the World Culinary Olympics and the renowned Chaine De Rotîsseurs.

After launching the Mobil 5-star St. Regis Hotel in San Francisco, John and Connie returned to Calgary to open their CHARCUT Roast House in 2009, followed by charbar in 2015.
